The Soup Bible
I call this Leek and Tattie soup! I have made this before using my mother-in-law’s recipe, but was looking for a recipe that actually had measurements.
I didn’t have the full amount of chicken stock, so I subbed 1/2 quart of vegetable stock and it was tasty. I used six golden yellow potatoes, two large organic leeks, and good ol’ sour cream.
I didn’t add any salt to what I served the kids or my mother, but I did add salt to my bowl(s).
Vanessa: Two bowls, I added a little salt and shredded cheese to one bowl, but didn’t think the cheese added anything.
Grandma: Three bowls! She did not add salt and also did not think the cheese added anything.
A&E: I waited too long to make this for lunch, so they had filled up on snacks at the grocery store. They primarily just played with it, but I think they’d like it.
Overall, it was good. I’ll be using this recipe again!
